1st Place Brisket
The 2016 competition barbecue season has officially kicked off for Burnt Finger BBQ! This weekend we were in Smithville, MO for The Best Dam BBQ Contest. We made a few subtle adjustments to our competition recipe and felt great about our results, although we had a slight hiccup with chicken. One of our rib foil packets dripped liquid on the heat deflector plate in the bottom of smoker while our chicken was cooking, so it took on a little too much smoke flavor. We knew it when we turned it in, and the results showed. Our appearance and tenderness scores were good, but the judges dinged us on taste for the strong smoke flavor. Had our chicken hit it’s normal scoring range, then we could have been in the running for the overall.
We ended up bringing home awards for 5th place ribs and 1st place brisket! That added up to 9th place overall out of 53 teams.
