In anticipation of the Chiefs' third consecutive trip to the Super Bowl, I was welcomed back to the TODAY Show to represent Kansas City and showcase some barbecue themed recipes for the big game.   

If you love onion rings and bacon (who doesn’t?), this recipe is a match made in BBQ heaven! These bacon-wrapped onion rings are smoky, crispy, and absolutely irresistible—perfect for game day, backyard barbecues, or anytime you need a next-level snack. With just a few simple ingredients and a little time on the grill or smoker, you’ll have a savory, crunchy, and downright addictive appetizer that’ll disappear fast. Let’s fire it up!

  1. Slice the onion into 1/2 inch rings.

  2. Separate the rings into two-ring sets (doubling up the onion makes for a heartier bite).  

  3. Preheat smoker (or oven) to 375 degrees.

  4. Line the bottom of a sheet pan with aluminum foil (or parchment paper) and place a raised rack on top of the sheet pan to catch the bacon drippings.

  5. Place the barbecue rub on one small plate and brown sugar on another.  

  6. Wrap the bacon around each set of onion slices.

  7. Dip the top side of wrapped onion into the rub, then dip again in brown sugar.

  8. Place the rings dipped side up on the wire rack.  Repeat for the remaining onion rings.

  9. Cook for 20 minutes.

  10. Turn rings over and cook for another 20 minutes.  Turn back over and check for doneness.

  11. Remove any fully-cooked rings and rest with the seasoned side facing up.  Cook remaining rings until the bacon has browned to your liking.

  12. Cool and serve with World Championship barbecue sauce from Burnt Finger BBQ.
